Swiss Oatmeal Recipe

I first fell in love with Swiss oatmeal when I had it the CornerBakery cafe. While I do love me some regular oatmeal from time to time, in the summer months I tend to gravitate towards meals that are cold, refreshing and ‘light.’ This oatmeal is healthy, delicious and won’t make you sweat more than you already do during the summer months in Chicago.

Ingredients

  • 1/2 cup of quick cooling oatmeal
  • 2 spoonfuls of greek yogurt ( I use 2% Fage)
  • 1/2 tbs of brown sugar
  • 1/2 banana
  • 1/4 green apple, diced
  • 2 tbs of dried cranberries
  • sliced almonds

Directions

The night before, combine oatmeal with water in a bowl (enough water to cover the top of the oats) and place in the fridge overnight. In the morning, drain water if necessary and add the yogurt along with the brown sugar, apples, banana, cranberries, and almonds. ENJOY! If you want to up the protein, you can add chia seeds or if you want it a little less thick, you can always add some almond milk or regular milk (depending on your preference).
