What Happened to Spring? – Weekend Recap

Judging from my current view, you wouldn’t be able to guess that it was March 23rd and officially spring time in Chicago. Needless to say it was a rough wake up and a rough commute into my office this morning. Even though it’s a snowy, less than ideal Monday, I’m still riding my weekend high of birthdays, dinners, and quality family time. I hope everyone enjoyed their weekend and is feeling refreshed and ready to start another week!

My sister and I woke up bright and early on Sunday morning for spin class at my local gym and headed back to the house for quick showers before enjoying a delicious breakfast at Checkers. This was our first time at dining at Checkers and we will most definitely return. The service was quick, friendly, and the food was absolutely delicious! I enjoyed their veggie skillet with scrambled eggs. My skillet came with wheat toast, broccoli, green peppers, onions, tomatoes, and cheddar cheese.

The high yesterday was in the upper 30’s, so after we said goodbye to my sister and her fiance, I decided it was a good day to make a big batch of my easy Minestrone soup. It definitely warmed me up and hit the spot. Since the weather isn’t looking too great this week, a warm bowl of soup will definitely warm the chilliest of days.
