Weight Watchers Lentil Soup Recipe

I made this batch of soup over the weekend and it turned out pretty darn good if I do say so myself. It’s full of fiber, veggies, and protein.

INGREDIENTS
-16 oz of lentils rinsed
-3 cups water
– 2 cups low sodium chicken broth
-2 celery stalks diced
– 3 carrots diced
– 1 large onion
-3 cloves garlic
– 14 oz can of diced tomatoes
– 1/2 tsp cumin
-1 tsp paprika
– 1 bay leaf
DIRECTIONS
– Heat 1 1/2 TBS olive oil in heavy bottom pan
-Saute vegetables and garlic until softened ( about 3 minutes)
-Add chicken broth, water, tomatoes, lentils and spices and bring to boil
-Reduce to a  low simmer and cover for 1 1/2 -2 hours
**Serving size eight 1 cup servings**
